Simple Chili
3/4 cup great northern beans, soaked overnight
3/4 cup black-Eyed peas, soaked overnight
1 large onion, chopped
1 large bell pepper, chopped
2 Tbsp olive oil
28 oz. can tomatoes (peeled)
1/2 to 1 tsp salt (to taste)
1/8 – 1/4 tsp paprika
1/2 – 1 tsp cayenne pepper
3 whole cloves
1 to 2 bay leaves
1 – 2 Tbsp chili power (hot, mexican)
Brown peppers and onions in oil (with a dash of ceyenne)
Throw everything in a pot and simmer up to one hour. Vary/add spices to taste.
