Grated Sweet potato Pudding
4 eggs
2 cups milk
3 cups grated uncooked sweet potatoes
4 Tbsp butter, melted
2 cups brown sugar
1/2 tsp cinnamon
1/4 tsp cloves, allspice
1/4 tsp salt
Beat eggs slightly, add remaining ingredients, mix well and pour into a buttered baking dish. Bake in slow oven (325 F) 30 minutes, or until well browned, stirring occasionally.
Serves 8.
