Orange and Maple Roasted Turkey
Brine:
1/2 cup granulated sugar
1/4 cup salt, kosher (Diamond Crystal brand)
10 black peppercorns, whole
1 medium orange, peeled and juiced
4 quarts water, cold
2 bay leaves
2 sprigs rosemary, fresh
4 sprigs thyme, fresh
2 carrots, peeled, cut to 2
2 white onions, peeled, cut to 2
2 ribs celery, peeled, cut to 2
12 pounds Honeysuckle White Whole Turkey (fresh or thawed)
Compound Butter:
1 pound unsalted butter, softened
2 oranges, juiced
1 1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup maple syrup
1 tablespoon rosemary, fresh and chopped
1/2 tablespoon thyme, fresh and chopped
2 cloves garlic, finely chopped
To brine: Combine all brine ingredients, except turkey, in large pot and simmer over low heat for 1 hour. Chill brine in ice bath until cold. Place whole turkey into food service- safe grade container. Pour chilled brine over top to submerge. Close bag and cover. Marinate for 24 hours in the refrigerator. Remove turkey from brine, drain excess liquid. Place vegetables and herbs in body cavity and secure.
Combine butter, orange juice, salt, pepper, maple syrup, rosemary, thyme and garlic in a large bowl. With fingers, slowly massage the compound butter into the skin of the turkey until well absorbed. Fold wings under the back of the turkey and return legs to the tucked position. Turkey may be cooked in a 325° F. to 350° F. oven or on a rotisserie.
If roasting in the oven, cook on a rack for approximately 3 hours or until the internal temperature of the turkey reaches 170° F. in the breast and 180° F. in the thigh.
If cooking by the rotisserie method, thread turkey evenly on the rotisserie-spit fork using a counterweight to achieve an even balance. Place a drip pan in the center of the grill beneath the area where the turkey juices will drip. Cook the turkey over indirect medium heat in a covered rotisserie.
If cooking with charcoal, replenish briquettes with about 15 briquettes every hour, as needed, to maintain medium heat. Cook until the internal temperature of the turkey reaches 170° F. in the breast and 180° F. in the thigh (about 3 hours). Allow turkey to rest for about 15 minutes. Remove vegetables and herbs from the cavity prior to carving. Place slices on a platter and garnish with oranges.

Grilled Chicken with Red & Blue(berry) Salsa
Grilled Chicken with Red & Blue(berry) Salsa
(Yield: 4 servings)
Red & Blue(berry) Salsa (recipe below)
4 (6 oz) chicken breasts, pounded to even thickness
Olive oil (for grilling the chicken)
Salt and pepper
Prepared couscous (optional, for serving)
Red & Blue(berry) Salsa:
1/2 c fresh blueberries, chopped
1/2 c fresh whole blueberries
1/2 red bell pepper, seed and diced
1/4 red onion, diced
1 jalapeno pepper, seeded and minced (optional)
3 TB fresh minced parsley
2 TB fresh minced mint (optional)
1 TB lemon juice
Pinch salt
In a bowl, stir together all ingredients for the salsa and refrigerate until ready to use (you can make this up to 1 day in advance but if you do so, I recommend waiting until right before you serve it to add the fresh minced herbs).
Lightly brush olive oil on both sides of the chicken breast, then season both sides with salt and pepper. Grill the chicken until fully cooked (there should not be any pink).
Serve the grilled chicken topped with salsa along with couscous.

Apple Pie Grilled to Your Taste
Sticking with the flour tortilla theme for desserts… they make a great platform for toppings and fillings in between! So why is this one named the Christopher Columbus Apple Pie? Because it’s FLAT!
Makes ONE Flat Apple Pie
INGREDIENTS
2 Apples peeled and sliced thin
Caramel sauce (that is meant to be heated)
Cinnamon flavored granola bar crumbled
Whipped Cream / Vanilla Ice Cream
Building the Grilled Christopher Columbus Flat Apple Pie-
Spread layer of caramel sauce on the first tortilla
Spread two layers of apple slices around the tortilla
Lay second tortilla on top
Spread thin layer of caramel over top of second tortilla
Sprinkle crumbled granola chunks over top of second tortilla
GRILLING-Medium Grill Heat 400-450F. Use grilling spray or olive oil to prepare the GrillGrates
Slide the Quesadilla off the cutting board onto the hot GrillGrates, close lid. Check in 3-4 minutes depending on how hot your are running.
Use The GrateTool to slightly lift an edge to check the progress and darkness of the sear marks. Quarter Turn if the sear marks are dark and well defined - it not wait 2 more minutes. After 8 minutes - be checking for crispy firmness of the Quesadila and remove with the GrateTool. Allow to sit for 2-3 minutes to firm up a bit.
It may be flat, but its great with a dollop of ice cream or a spritz of whipped cream.

Down Island Burgers with Mango Mayo & Grilled Onions
Down Island Burgers with Mango Mayo & Grilled Onions
Mango Mayo
1/4 cup mayonnaise
1/2 cup diced ripe mango
2 teaspoons freshly squeezed lime juice
Patties
1 1/2 pounds ground pork
2 tablespoons Sauvignon Blanc
2 tablespoons TABASCO Pepper Sauce
1/4 cup panko (Japanese bread crumbs)
4 large garlic cloves, minced
4 teaspoons minced fresh ginger
4 teaspoons curry powder
1 teaspoon salt
1/2 teaspoon ground allspice
Vegetable oil, for brushing on the grill rack
4 (1/2-inch-thick) sweet onion slices
4 seeded sandwich rolls, split
1 bunch watercress, large stems discarded
Directions- Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.
To make the mayo, combine all of the ingredients in food processor and process until smooth.
To make the patties, combine the pork, Sauvignon Blanc, pepper sauce, panko, garlic, ginger, curry powder, salt, and allspice in a large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 4 equal portions and form the portions into patties to fit the rolls.
When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack, cover, and cook, turning once, until done to preference, 4 to 5 minutes on each side for medium. While the patties are cooking, place the onions on the grill rack and cook until golden brown and crisp-tender, 2 to 3 minutes per side. During the last few minutes of cooking, place the rolls, cut side down, on the outer edges of the rack to toast lightly.
To assemble the burgers, on each roll bottom, place a patty, an equal portion of the mayo, an onion slice, and a generous amount of watercress. Add the roll tops and serve.

Vegetable oil
4 slices sweet onion -- 1/2 inch thick
4 crusty rolls -- split, toasted
4 romaine lettuce leaves
4 tomato slices -- 1/2 inch thick
8 slices Swiss cheese
1/4 cup mayonnaise
1 tablespoon Dijon mustard
In small bowl, combine sauce ingredients (mayonnaise and Dijon mustard); set aside.
Shape ground beef into four 3/4" thick patties. Lightly brush oil onto cut sides of onion. Place patties and onions on grid over medium, ash covered coals. Grill, uncovered, 13 to 15 minutes or until centers are no longer pink and onions are tender, turning once. Season burgers with salt and pepper, if desired, after turning. Approximately 1 minute before burgers are done, top each burger with 2 slices cheese.
Meanwhile, spread equal parts of sauce mixture on top half of each roll. Line bottom half of each roll with lettuce and tomato; top with cheeseburger and onion. Close sandwiches.

Makes 4 servings.
1 pound ground chuck
3 tablespoons minced scallion, white and green part
1 tablespoon fresh grated ginger
1 tablespoon minced garlic
1 tablespoon soy sauce
2 tablespoons teriyaki sauce
1/2 teaspoon freshly ground black pepper
Mushroom filling (recipe follows)
Combine ground chuck, scallion, ginger, garlic, soy sauce, teriyaki sauce and black pepper in a bowl.
Form meat into 8 thin patties, 3/8 -inch thick. Place an equal amount of mushroom filling on half of the patties, leaving a margin around the edge.
Cover the stuffing with the remaining patties. Seal the edges by pressing them together with your fingers. Refrigerate.
Preheat grill to medium-high. Grill the patties uncovered for 21/2 to 31/2 minutes per side for charcoal grills, flipping once, until internal temperature reaches 160 F. (For gas grills, cook covered for 31/2 to 41/2
minutes per side.)
Serve on small, sesame seed hamburger buns.

3/4 cup teriyaki sauce
1 pound ground beef

4 lettuce leaves
4 onion or sesame seed buns, -- split and toasted
4 slices Swiss cheese
4 bacon strips -- cooked
Drain pineapple juice into a small bowl; add teriyaki sauce. Place 3 Tablespoon in a re-sealable plastic bag. Add pineapple and rotate to coat; set aside.
Shape beef into four patties; place in a 8" square baking dish. Pour the remaining teriyaki sauce mixture over patties; marinate for 5-10 minutes, turning once.
In a skillet, saute onion in butter until tender, about 5 minutes.
Grill or broil burgers until no long pink. Place pineapple on grill or under broiler to heat through.
Layer lettuce and onion on bottom of buns. Top with burgers, cheese, pineapple and bacon. Replace tops; serve immediately.

Don't overwork it. You really don't even need to add salt and pepper to the meat; all the action is in the toppings. Also, let the patties rest before cooking. Otherwise they'll be chewy.
Start with a clean cooking grate. Dirt makes food taste bad and makes it stick.
Cook it hot. Heat the grill to between 450° and 550°. Cold burgers on a cold grill are going to stick every time.
Create a nonstick cooking surface. When the cooking grate is hot, wipe it quickly and carefully with an oiled square of several folded paper towels.

Start with a clean cooking grate. Dirt makes food taste bad and makes it stick.
Cook it hot. Heat the grill to between 450° and 550°. Cold burgers on a cold grill are going to stick every time.
Create a nonstick cooking surface. When the cooking grate is hot, wipe it quickly and carefully with an oiled square of several folded paper towels.

Notes: Suzanne Goin serves these burgers with an addictive chipotle aioli; for an easy version, blend one or two canned chipotle chiles into a cup of mayonnaise.
Makes 4 burgers
Ingredients
1 1/2 pounds ground pork
4 ounces firm chorizo or hot Italian sausage, casing removed and crumbled
2 slices (2 oz. total) bacon, finely chopped
1/4 cup olive oil
1/4 cup minced shallots
2 tablespoons chopped parsley
2 teaspoons fresh thyme leaves
1 teaspoon ground cumin
4 hamburger buns, toasted

1 tb chopped fresh parsley
1 cup fresh breadcrumbs
1 egg
Baby cos lettuce leaves
tomato sauce
mustard
pickles
onion marmalade
mayonnaise
1 tb olive oil to brush
4 slices Swiss cheese
4 hamburger buns
1 roasted red capsicum cut into strips
Place beef, onion, garlic, sauces, parsley, breadcrumbs and egg in a bowl. Season with salt and pepper and use your hands to combine the mixture well, then form into 4 thickish patties. Refrigerate for 30 minutes.
Separate, wash and dry the lettuce leaves. Place in a glass. Place the tomato sauce, mustard, pickles, onion marmalade and mayonnaise in separate serving dishes. Preheat oven to 120C. Heat a chargrill pan or barbecue to high. Brush patties with oil and cook for 3 minutes, each side until cooked through.
Place a cheese slice on each, patty for last minute of cooking. Meanwhile heat the buns in the oven. Place a patty on each bun top with capsicum and serve with the condiments. Onion marmalade and roasted red capsicum are available from good delicatessens.

***VEGETABLE SALAD***
1 large zucchini -- sliced 1/4" thick
1 large yellow squash -- sliced 1/4" thick
1 red pepper
1 yellow pepper
1 large tomato --sliced 1/4" thick
1 red onion --sliced 1/4" thick
1 fennel bulb -- cut in half
garlic -- chopped clove
1 pinch cayenne pepper
1 pinch cumin
1 pinch ground coriander
salt and pepper to taste
***COUSCOUS***
2 cups couscous -- cooked
1 bunch chopped fresh mint
1 lime -- juice of
salt and pepper to taste
***VINAIGRETTE***
1 teaspoon nicoise olives -- finely chopped
2 ounces balsamic vinegar
2 ounces extra-virgin olive oil
salt and pepper
Grill the vegetables until tender. Remove skin of pepper after grilling and cut in half. Remove seeds and dice into large cubes. Dice other vegetables and mix all ingredients for salad.
In a separate bowl mix couscous, mint, lime, salt and pepper.
In a third bowl mix vinegar, olives, salt and pepper. Whisk in olive oil.
In a picnic salad bowl arrange vegetables, couscous and vinaigrette until everything is utilized. Decorate with mint leaves.

***COUSCOUS***
2 cups couscous -- cooked
1 bunch chopped fresh mint
1 lime -- juice of
salt and pepper to taste
***VINAIGRETTE***
1 teaspoon nicoise olives -- finely chopped
2 ounces balsamic vinegar
2 ounces extra-virgin olive oil
salt and pepper
Grill the vegetables until tender. Remove skin of pepper after grilling and cut in half. Remove seeds and dice into large cubes. Dice other vegetables and mix all ingredients for salad.
In a separate bowl mix couscous, mint, lime, salt and pepper.
In a third bowl mix vinegar, olives, salt and pepper. Whisk in olive oil.
In a picnic salad bowl arrange vegetables, couscous and vinaigrette until everything is utilized. Decorate with mint leaves.
