Witch's Hairy Finger Breadsticks Recipe

With its bright green color and shredded cheese that looks like hair,
you'll think you really are eating a witch's hairy finger! These
taste best when served right out of the oven because the cheese is still
warm and soft. Don't forget the marinara dipping sauce!-Taste of

Bake: 10 min.

Ingredients

3 teaspoons active dry yeast
1/4 cup warm water (110° to 115°)
1/2 cup warm milk (110° to 115°)
1 egg
1/4 cup grated Parmesan cheese
1/4 cup butter, softened
1 tablespoon sugar
3/4 teaspoon salt
3/4 teaspoon Italian seasoning
1/4 teaspoon garlic powder
1/4 teaspoon green food coloring
2 to 2-1/2 cups all-purpose flour
1 egg white, lightly beaten
1/4 cup shredded Parmesan cheese
1/3 cup sliced almonds
Marinara or spaghetti sauce

Directions

In a large bowl, dissolve yeast in warm water. Add the milk, egg,
grated cheese, butter, sugar, salt, Italian seasoning, garlic powder,
food coloring and 1 cup flour. Beat on medium speed for 2 minutes. Stir
in enough remaining flour to form a soft dough.
Turn onto a floured surface; knead until smooth and elastic, about
6-8 minutes. Place in a greased bowl, turning once to grease top. Cover
and let rise in a warm place until doubled, about 45 minutes.
Punch dough down; let stand for 10 minutes. Turn onto a lightly
floured surface. Divide into 16 pieces. Shape each piece into a 10-in.
rope. Cut in half. Place 2 in. apart on greased baking sheets. Cover and
let rise for 30 minutes.
Brush egg white over breadsticks; sprinkle with shredded cheese.
Place an almond slice at the tip of each. Bake at 375° for 8-10
minutes or until lightly browned. Serve warm with marinara sauce. Yield:
32 breadsticks.

Cool Spider Cupcakes


Cool Spider Cupcakes

Makes: 24 servings, 1 cupcake each
24 baked chocolate cupcakes, paper liners removed
1 tub (8 ounces) COOL WHIP Whipped Topping, thawed
1/4 cup chocolate sprinkles
24 pieces (24-inch each) black shoestring licorice
48 small candies
FROST tops and sides of cupcakes with whipped topping. Decorate with
chocolate sprinkles.
CUT each piece of licorice into 8 pieces. Insert 8 pieces licorice into
top of teach cupcake to create "spider legs." Top with 2 candies for
"eyes." Store leftover cupcakes in refrigerator.

Kraft Kitchens Tips Variation
To create "lady bugs," stir a few drops red food coloring into whipped
topping. Frost cupcakes as directed. Decorate with chocolate chips.

The kids will love helping out in the kitchen with this fun project.
Decorate these delicious cupcakes together, and then be sure to try one
yourself.

Ingredients:
3/4 cup (1 1/2 sticks/6 oz./170g) butter
1 1/2 cups granulated sugar
3 eggs
3/4 cup milk
1 tsp. almond extract
2 1/4 cups all-purpose flour
2 1/2 tsp. baking powder
3/4 tsp. salt

For the Frosting:

Orange food coloring paste or yellow and red liquid food coloring
2/3 cup water
12 cups confectioners' sugar
1 1/4 cups solid vegetable shortening
3/4 teaspoon salt
1/2 teaspoon almond extract
1/2 teaspoon clear vanilla extract
1/4 teaspoon butter flavoring

You will need:

Cupcake or muffin liners
Muffin pan (s)
Electric mixer

Instructions:
For the Cupcakes:
Preheat oven to 375 degrees F/190 degrees C. Place cupcake liners in
cups of muffin pan (s).
Place all cupcake ingredients in bowl of electric mixer. Mix on low
speed until thoroughly combined, scraping bowl frequently. Increase
speed to medium and beat for four minutes. Pour into muffin cups. Bake
in prehated oven for 25-30 minutes (Do not overbake). 
Cool cupcakes in pan on wire rack for 10 minutes, then remove cupcakes from pan and let cool completely on wire cooling rack.

For the Frosting:
Mix 4 cups of the confectioners' sugar with water, one cup at a time,
beating after each addition at low speed. Alternately add shortening and remainder of sugar. Add salt and extracts and butter flavoring; beat at low speed until smooth (To avoid confectioners' sugar from going all over, cover your bowl with a towel while mixing). Mix in orange color paste or 2 drops of yellow and 1 drop of red food coloring and mix.

Fill a pastry bag with frosting and using a large star tip, pipe
frosting onto each cupcake. If desired, top each cupcake with decorative candy or sprinkles for decoration.
Makes 24 cupcakes.

A Halloween Haunted House
2 containers (16 ounce) chocolate fudge frosting*
Decorations:
pretzel sticks
graham crackers
black licorice and red twists
candy corn
M&Ms
Foil wrapped Halloween Candy
rice crackers
Orange Sprinkles
Colored icing for writing or decorating
2 empty 1 qt. milk cartons, rinsed and dried
1 large tray covered with foil.
*You can use a thick homemade frosting instead.
Tape each milk carton closed at top. Tape milk cartons
together to make a house. Wrap with foil. Attach firmly
to the covered tray with tape. Frost cartons with chocolate frosting.
Frost the tray also to use as the lawn. Decorate with the assorted
treats! Some ideas-
*Sprinkle orange sugar on the roof of the house.
*Rice crackers make neat "attic" windows.
*graham crackers for windows and doors-highlight with icing.
*pretzel stick window panes
*M&M "pathway stones" leading to the door.
*Candy corn "icicles" under the roof
After you have the house and pathway finished add
details to the lawn area. Foil wrapped candy is great
because you buy little mummies, ghosts or pumpkins
and place them on the pathway and around the house.
Buy from the bulk section of your grocery store to get
a really good selection without having to buy a lot of
one type of candy. After all the oohs and ahs have
subsided and Halloween is over, let the kids pick off
all the candy while they discuss what to do for next
year's Haunted House Spectacular!

Notes from Lisa: Do the oranges in your juice benefit from volcanic soil & cool ocean breezes? If not, you might think about trading up to sweet tart or gory oranges, choice for Halloween parties because they have the dark red juice of blood oranges.

Though not in season until December through May & often difficult to get since they are mainly grown in the Mediterranean, bottled gourmet imported blood orange juice is available anytime, often at reasonable prices, from online retailers, like Amazon.com & at gourmet & specialty chains like Trader Joe's.

Italian Volcano Blood Orange Juice brand, recently selling on Amazon.com for about $15 for three 750 ml bottles, is made from oranges from a small area of Eastern Sicily (the volcanic soil heart of blood orange country) in varying color & flavor combinations rarely available from other parts of the world. Blood orange sodas, syrups & concentrates also sell at retailers, perfect for snow cones & inclusion in sophisticated desserts.

In fact, blood oranges, since they are sweeter than ordinary varieties, are considered one of the top dessert oranges in the world. The juice is outstanding in cakes & sauces for baked goods. It also has a bold presentation & flavor choice for savory foods, like the Hollandaise-based maltaise sauce, which it is often used in, or mixed with spices for a cocktail sauce for shrimp cocktail or dressing for shrimp salad. Cold, slick shrimp (ghoulishly resembling severed fingers!) with a blood sauce make an interesting Halloween menu choice.

The bright red juice, excellent alone as a refreshing beverage, is also the perfect base for grown-up Halloween party cocktails. Cooking Light magazine suggests a pitcher of dynamically colored mimosas with 1 / 2 cup strained blood orange juice, 3 cups champagne or sparkling wine & 1 tablespoon Cointreau (orange-flavored liqueur).

Ingredients Cake:
2 1/4 cups all-purpose flour, plus 1 tablespoon for dusting pan
1 teaspoon baking powder
1/4 teaspoon salt
1 3/4 cups sugar
10 tablespoons butter, softened
1/2 cup (4 ozs) Neufchatel cheese, softened, or cream cheese, if necessary
1 teaspoon grated lemon rind
1 teaspoon grated orange rind
3 large eggs
1/2 cup (preferably low-fat) buttermilk
1/4 cup fresh orange juice
2 tablespoons fresh lemon juice
3 large egg whites

Ingredients Sauce:
2 cups blood orange juice (see Note)
2/3 cup sugar

Yields 16 servings

Directions:
1. Preheat the oven to 325ºF.
2. To prepare the cake: Coat a 10 inch tube pan with non-stick cooking spray. Dust with 1 tablespoon flour. Set aside.
3. Lightly spoon 2 1/4 cups flour into dry measuring cups; level with a knife. Combine the flour, baking powder & salt. Stir well with a whisk.
4. Combine 1 1/2 cups of the sugar, butter & cheese in a large bowl. Beat with a mixer at medium speed until well blended (about 7 minutes). Add the rinds; beat well. Add 3 large eggs, 1 at a time, beating well after each addition.
5. Combine the buttermilk, 1/4 cup orange juice & lemon juice. Add the flour mixture & buttermilk mixture alternately to the sugar mixture, beginning & ending with the flour mixture.
6. Place the egg whites in a medium bowl. Beat with a mixer at high speed until soft peaks form, using clean, dry beaters. Add the remaining 1/4 cup of sugar, 1 tablespoon at a time, beating until stiff peaks form.
7. Gently fold 1/3 of the egg white mixture into the batter & fold in the remaining egg white mixture.
8. Spoon the batter into the prepared pan. Bake for 1 hour & 10 minutes or until a wooden pick inserted in the center comes out clean.
9. Cool in the pan on a wire rack for 10 minutes. Remove the cake from pan. Cool the cake completely on a wire rack.
10. To prepare the sauce: Combine the blood orange juice & the 2/3 cup sugar in a large, heavy saucepan. Bring to a boil, carefully stirring until the sugar dissolves. Reduce the heat & simmer until reduced to 1 cup (about 30 minutes), stirring gently occasionally.
11. Serve the sauce with the cake.

Note: When blood oranges are not in season, or anytime, you can use bottled blood orange juice (strained if there is any pulp in it). During blood orange season, if desired, you can use the strained juice of fresh blood oranges (about 12 for this recipe). Regular strained orange juice, preferably fresh, also can be substituted.

PEANUTS 'N CANDY HALLOWEEN CAKE

1 pk Yellow Cake mix
1 c Unsalted roasted peanuts;
- coarsely chopped
1 c Water
1/3 c Oil
3 Eggs

----------------------------------TOPPING----------------------------------
1 cn Vanilla Frosting Supreme
1/4 c Peanut butter
1/2 c Unsalted roasted peanuts;
- coarsely chopped
1 Butterfinger bar; chopped
1/3 c Candy corn -OR-
16 Candy pumpkins

Heat oven to 350~. Grease and flour 13x9-inch pan. In large bowl, combine
all cake ingredients. Beat as low speed until moistened; beat 2 minutes at
high speed. Pour into prepared pan. Bake at 350~ for 30-40 minutes or until
toothpick inserted in center comes out clean. Cool completely. In medium
bowl, mix frosting and peanut butter until smooth. Spread evenly over cake.
Sprinkle with peanuts and candy bar. Arrange candy corn on cake. 12-16
servings.
