I think the notes people include in their recipes make them more personal. If I write a note myself about a recipe, it will always be written in purple.

Red Beans And Rice


Red Beans And Rice

1 med. onion, chopped
1/2 c. chopped green pepper
2 garlic cloves, minced
2 T. olive or canola oil
1/3 c minced fresh cilantro or parsley
3 16 oz. cans red beans, rinsed, and drained
1/2 tsp. salt
1/2 tsp. ground cumin
1/8 tsp. pepper
3 c hot cooked rice

In a lg. non-stick skillet, saute the onion, green pepper, and garlic in oil
until tender.

Add cilantro, and cook, and stir until wilted, about 1 minu.

Stir in the beans, salt, cumin and pepper.

Cover and simmer for 10-15 minutes. Serve over rice.

Makes 6 servings
