BANANA MUFFINS
10oz plain flour
1 tsp baking powder
1 tsp bicarbonate of soda
1/2 tsp salt
3 large well-ripened bananas
3-4oz granulated sugar
1 egg beaten
2 floz milk or water
3 floz vegetable oil
2-3oz walnuts or chocolate chips (optional)
OVEN 375-400°F/ 190-200°C
1. Sift together flour,baking powder,bicarb,and salt; add chocolate if using
2.In another bowl mash bananas; stir in sugar, egg, milk, and oil
3.Pour wet ingredients into dry; stir until just combined. Batter will be lumpy but no dry flour will be visible; add walnuts if using.
Do not over stir
4. Spoon into prepared tins. Bake 20-25 minutes until tops are lightly browned and spring back when pressed gently.
Once cool store in airtight container.
Freeze well
