Weight Watchers Diabetic Low Fat Bangkok Pork

Serving Size : 12
FOR PORK CHOPS:
4 lean center-cut loin pork chops -- (1/2-inch thick)
1 tablespoon low-sodium soy sauce
1/3 cup Thai Seasoning
Vegetable cooking spray
FOR THAI SEASONING:
18 low-sodium sesame-flavored Melba toasts
1 tablespoon garlic powder
1 tablespoon ground ginger
1 teaspoon sugar
1/2 teaspoon ground red pepper
FOR PORK CHOPS:
Trim fat from pork chops, and brush pork with soy sauce.
Place 1/3 cup Thai Seasoning in a large zip-top heavy-duty plastic bag. Add chops; seal bag, and shake to coat.
Place chops on a baking sheet coated with cooking spray; bake at 450 degrees for 15 minutes or until chops are done. Yield: 12 servings
FOR THAI SEASONING: Place Melba toasts in food processor, and process until finely crushed. Combine crushed Melba toasts and remaining ingredients in a zip-top heavy duty plastic bag; seal bag, and shake well. Store tightly sealed; shake well before each use. Use as a coating mix for pork or poultry.
Yield: 1 cup (serving size: 1 tablespoon plus 1 teaspoon).

APPLESAUCE COOKIES
APPLESAUCE COOKIES -
SUGARLESS
1/2 c. flour
1 1/2 tsp. cinnamon
1/2 tsp. soda
1/4 tsp. salt
1/4 tsp. nutmeg
1 tsp. cloves
1 tsp. allspice
1/2 c. quick oatmeal
1/2 c. unsweetened applesauce
1/4 c. cooking oil
1 med. egg
1 tsp. vanilla
Mix flour, cinnamon, soda, salt, nutmeg, cloves, allspice, oatmeal and raisins. Add applesauce, oil, egg, vanilla and mix just to moisten. Drop on greased sheets. Bake at 375 degrees for about 12 minutes. Best served slightly warm.

Sugar Free Blackberry Cobbler
cobbler filling:
1/2 cup fruit-sweet boysenberry or blueberry syrup
3 Tablespoons cornstarch
3 Tablespoons water
3/4 teaspoon cinnamon
4 cups blackberries (or marionberries, boysenberries, blueberries)
cobbler dough:
1 cup unbleached flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 Tablespoons melted margarine
2 Tablespoons apple juice concentrate
1/4 cup low fat fruit-sweet berry or cherry yogurt
1-2 packets Equal® ( NutraSweet® as sweet as 2 teaspoons sugar each)
Preheat oven to 400 degrees. Spray deep dish pie pan with nonstick spray.
Stir cornstarch into water until dissolved. Mix in syrup and cinnamon, and let sit while you make the dough.
Sift together flour, baking powder, and salt. In a separate bowl, combine margarine, juice concentrate, and yogurt. Pour this mixture over the sifted flour, and blend gently with a fork for 20 to 30 seconds. Then knead dough 20 to 30 more seconds.
On floured surface, press dough into approximately 1/4 to 1/2 inch thickness, yet wide enough to cover blackberries in pan. Fold rinsed, drained berries into syrup and cornstarch mixture. Pour berry filling into greased pan, and set cobbler dough into place over the top, making the dough surface as even as possible.
Press dough against sides of pan, and cut a design in the dough for air vents. Turn oven down to 375 degrees, and bake for 20 to 25 minutes. The cobbler is done when the dough is light brown. Since blackberries vary in sweetness, be prepared, after baking, to sprinkle up to 2 packets Equal® over the top

DIABETIC OATMEAL LACE PENNIES

INGREDIENTS
1 cup old-fashioned rolled oats
1 cup granulated sugar
3 tablespoons all-purpose flour
1/4 teaspoon baking powder
1/2 teaspoon salt
1 egg, beaten
1/2 cup margarine or butter, melted
1/2 teaspoon vanilla
DIRECTIONS
Preheat oven to 350 degrees F. Line cookie sheet with foil, bright side up.
In a bowl, mix together oats, sugar, flour, baking powder and salt.
In another bowl, beat egg, margarine and vanilla.
Add flour mixture and mix well. (If dough seems too soft, chill for 15 to 20 minutes to firm.)
Drop by rounded teaspoonfuls, about 2 inches apart, onto prepared cookie sheet. Bake in preheated oven
for 8 to 10 minutes. Cool for 2 minutes on foil, then transfer to wire racks to cool completely.
