Weight Watchers Spanish Rice Salad

Weight Watchers Spanish Rice Salad
Serving Size : 10

2 Cups Rice -- cooked
2 11oz. Mexicorn Whole Kernel Corn With Red and Green Peppers -- drained
1/2 Cup Red Onion -- chopped
1/2 Cup Green Pepper -- chopped
1 Cup Reduced Fat Cheddar Cheese -- shredded

Dressing
3/4 Cup Salsa -- thick and chunky
1/2 Cup Light Sour Cream
1/2 Teaspoon Salt
1/2 Teaspoon Cumin
1/2 Teaspoon Chili Powder

Garnish
1 Avocado -- pitted and sliced
10 Cilantro Sprigs

In a large bowl, combine all salad ingredients. Mix well.

In medium bowl, combine all dressing ingredients. Mix well.

Add dressing to salad. Toss to coat. Spoon into individual serving plates. Garnish

Bangkok Pork

Weight Watchers Diabetic Low Fat Bangkok Pork
(2 WW Points)
Serving Size : 12

FOR PORK CHOPS:

4 lean center-cut loin pork chops -- (1/2-inch thick)
1 tablespoon low-sodium soy sauce
1/3 cup Thai Seasoning
Vegetable cooking spray

FOR THAI SEASONING:
18 low-sodium sesame-flavored Melba toasts
1 tablespoon garlic powder
1 tablespoon ground ginger
1 teaspoon sugar
1/2 teaspoon ground red pepper

FOR PORK CHOPS:
Trim fat from pork chops, and brush pork with soy sauce.
Place 1/3 cup Thai Seasoning in a large zip-top heavy-duty plastic bag. Add chops; seal bag, and shake to coat.

Place chops on a baking sheet coated with cooking spray; bake at 450 degrees for 15 minutes or until chops are done. Yield: 12 servings

FOR THAI SEASONING: Place Melba toasts in food processor, and process until finely crushed. Combine crushed Melba toasts and remaining ingredients in a zip-top heavy duty plastic bag; seal bag, and shake well. Store tightly sealed; shake well before each use. Use as a coating mix for pork or poultry.

Yield: 1 cup (serving size: 1 tablespoon plus 1 teaspoon).

Yam Brownies

Yam Brownies

Serves: 24

Ingredients
3/4 cup unsweetened applesauce
1 cup SPLENDA® No Calorie Sweetener, Granulated
1/4 cup light molasses
1 cup cholesterol-free egg product
2 teaspoons vanilla extract
2 cups cake flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups peeled and finely shredded yam
1/2 cup SPLENDA® No Calorie Sweetener, Granulated
2 tablespoons light butter, melted
2 tablespoons milk

Directions
1 Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.

2 In a large bowl, stir together the butter, SPLENDA® Granulated Sweetener, and molasses until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking powder, and salt; stir into the batter just until blended. Fold in the shredded yam. Spread the batter evenly in the greased baking dish.

3 Bake for 30 minutes in the preheated oven, until a toothpick inserted into the center, comes out clean. Mix together the SPLENDA®, butter and milk until smooth. Spread over the brownies while they are still warm. They will absorb some of the glaze. Serve hot or warm.

Low Cal Turkey Chili

This is my recipe, and it is very good. You would not know this chili was even close to healthy.

3   C onion roughly cut, saute in 0 cal spray butter
1   lb ground turkey, brown with onions
10 tsp garlic
1   envelope Fajita seasoning
1   sm can stewed tomatoes
1   sm can rotel tomatoes
1   sm can tomato paste
1   can water
2   med cans pinto or kidney beans

Mix together in a large pot.  Simmer for at least 30 minutes.
267 calories per cup, makes about 14 cups.
