Cucumber and Daikon Salad
This type of vinegary dish is called sunomono. It
has a refreshing taste and makes a good side dish.
Ingredients:
1 small daikon radish, peeled and thinly sliced
into half or quarter rounds
1 small cucumber, thinly sliced into rounds
5 Tbsp rice vinegar
2 Tbsp sugar
1 tsp salt
Preparation:
Put cucumber and daikon slices in a bowl and
sprinkle salt and wait about 5-10 minutes. Wash off the daikon and cucumber
slices and drain through a strainer. Lightly squeeze them to remove some liquid
and put in a bowl. Mix rice vinegar and sugar in a small bowl. Pour the vinegar
mixture over the cucumber and daikon. Set aside for about 15 minutes. Serve
into individual bowls or a large bowl.
