Weight Watchers Spanish Rice Salad
Serving Size : 10
2 Cups Rice -- cooked
2 11oz. Mexicorn Whole Kernel Corn With Red and Green Peppers -- drained
1/2 Cup Red Onion -- chopped
1/2 Cup Green Pepper -- chopped
1 Cup Reduced Fat Cheddar Cheese -- shredded
Dressing
3/4 Cup Salsa -- thick and chunky
1/2 Cup Light Sour Cream
1/2 Teaspoon Salt
1/2 Teaspoon Cumin
1/2 Teaspoon Chili Powder
Garnish
1 Avocado -- pitted and sliced
10 Cilantro Sprigs
In a large bowl, combine all salad ingredients. Mix well.
In medium bowl, combine all dressing ingredients. Mix well.
Add dressing to salad. Toss to coat. Spoon into individual serving plates. Garnish
