Nacho Soup


Ingredients

2 16oz Cans of Refried Beans with equal parts Water
Round Tortilla Chips
Shredded Cheddar Cheese
Jalapeno Pepper slices

Step 1

In a medium size soup pot or sauce pan combine both cans of refried
beans with the water over a med high heat 
and mix well until it is soup like consistency and bring the mixture to
a boil.

Step 2

Ladle the hot soup equally into 4 bowls sprinkling shredded cheese over
the soup to melt.

Step 3

Place 1 tortilla chip in the center of the soup with a dollop of sour
cream on top of the chip. Put several jalapeno 
slices around the tortilla chip and serve with a few more of the chips
on the side. 

Serves 4

Spaghetti Squash New Mexican

Spaghetti Squash New Mexican
Serves 4

Preheat the oven to 400 degrees F.

1 medium spaghetti squash
Sea salt and ground pepper
A drizzle of fruity extra virgin olive oil, as needed
A sprinkle of cumin and good chili powder, to taste (I added a sprinkle of minced garlic, as well)
A splash of water, as needed

Halve the squash lengthwise and place cut side up in a roasting pan. Season with sea salt and pepper, a drizzle of good olive oil, some cumin, chili powder (and garlic, if adding). Add two inches of water to the pan to help keep the squash from sticking to the bottom of the pan. Roast in a hot oven for about an hour, until the squash is fork-tender. Half way through roasting I poured a little bit of spring water on each squash to keep it moist.

When the squash is done, remove it and let it cool. In the meantime, gather:

Extra virgin olive oil
1 medium sweet or red onion, diced
4 cloves garlic, chopped
2 ears of fresh corn, kernels cut off [if you are allergic to corn, try a
red bell pepper, diced]
Cumin and chili powder, to taste
1 cup ripe and juicy grape or cherry tomatoes, halved
1 14-oz. can black beans, rinsed, drained well
Two whole roasted green chiles, mild or spicy, seeded, chopped
1 lime - for zest, and juice

For garnish:
Toasted pine nuts or pumpkin seeds
Fresh chopped cilantro
Lime wedges

Heat a splash of olive oil in a large skillet [I like to use an iron skillet for - you guessed it - the iron it adds to food]. Add the onion, garlic, corn kernels and spices; stir for five minutes until the onion has softened.

Meanwhile, when the squash is cool enough to handle: take a fork and scrape the squash, making spaghetti-like strands.

You can assemble the ingredients in a casserole-style baking dish and bake it - or you can do it all on the stove-top in the large skillet.

If you're going to bake it - toss the squash strands into a large mixing bowl. Add a little of your best olive oil to moisten. Season with more sea salt and pepper. Sprinkle in some added cumin or chili powder, if you like, to taste. Toss well. Add the skillet mixture, tomatoes, black beans, green chiles. Combine. Grate a lime and add the zest. Cut and squeeze the lime juice all over the mixture and toss lightly. Pour the mixture into a
casserole style baking dish. Cover and bake in a 350 degree oven until heated through - about 20 to 25 minutes.

If you'd rather do it up in a skillet, add the squash to the skillet mixture, and stir in the remaining ingredients, as above. Cover and gently heat through over medium heat - roughly five to ten minutes.

Serve with a sprinkle of fresh chopped cilantro and some lime wedges.
Serves four.
Cook's Notes:
Add a topping of toasted gluten-free breadcrumbs. Or top with a layer of fresh cooked polenta, like a pie.

Taco Casserole

Taco Casserole


1 1/2 pounds lean ground beef
1 teaspoon chili powder
1 teaspoon dried leaf oregano
1/2 cup taco sauce
1 can (8 ounces) tomato sauce
1 teaspoon garlic powder
1/2 teaspoon salt, or to taste
dash of Tabasco sauce
6 ounce bag corn chips, slightly crumbled
chopped onion
chopped tomato
grated cheese
chopped lettuce

Pan Size: 3 quart casserole Oven Temp: 350 Time: 10-15 minutes

Brown ground beef; mix in the taco sauce, tomato sauce, chili powder, garlic salt, oregano, Tabasco sauce. Simmer 10 minutes.

Put half on bottom of a 3-quart casserole. Top with about half of the crumbled chips. Add remaining ground beef mixture, some chopped tomato, onion, chopped lettuce, and grated cheese (use 1 cup or more). Put remaining corn chips on top.

 Bake at 350° for 12 minutes, or until hot and cheese is melted.

Chicken Tortilla Soup

Chicken Tortilla Soup

1 large onion
1 (4oz) can diced green chillies
1 tsp. chili powder
1 tsp. cumin
1 1/2 cooked chicken
1 clove garlic , finely chopped
1 tps. oregano
1/2 cup uncooked rice
1/2 tsp. cayenne pepper
8 cups chicken broth

Combine all ingredients in large pt.Cook until rice is done,about 25 minutes. Season to taste with salt and pepper. Serve with cheese and chips

Burrito Casserole

Burrito Casserole


2 lb. hamburger
2 pkg. taco seasoning mix
1 can refried beans
2 cans cream of mushroom soup
3 c. sour cream
10 soft tortilla shells
1 pkg. shredded cheese

Directions

Brown hamburger; drain. Add refried beans and taco mix. Mix together mushroom soup and sour cream. Put some of the mushroom soup mixture into the bottom of a large casserole dish. Layer some of the tortilla shells, some hamburger mixture, then mushroom soup mixture. Keep layering until all are used; add cheese on top. Bake at 350 degrees for 1 hour. Serve with lettuce, tomatoes and salsa!

Creamy Chicken Enchiladas

Creamy Chicken Enchiladas
Serve a Mexican favorite your family will love.
Serves: 6

- 1 can (10 3/4 oz.) Campbell's® Cream of Chicken or Campbell's® 98% Fat Free Cream of Chicken Soup or 25% Less Sodium
- 1 container (8 oz.) sour cream
- 1 cup Pace® Picante Sauce
- 2 tsp. chili powder
- 2 cups chopped cooked chicken
- 1 cup shredded Monterey Jack cheese
- 10 Mission® Fajita Size Flour Tortillas, warmed
- 1 medium tomato, chopped
- 1 green onion, sliced

MIX soup, sour cream, picante sauce and chili powder.

MIX 1 cup picante sauce mixture, chicken and cheese.

SPREAD about 1/4 cup chicken mixture down center of each tortilla. Roll up and place seam-side down in 3-qt. shallow baking dish. Pour remaining picante sauce mixture over enchiladas. Cover.

BAKE at 350°F. for 40 min. or until hot. Top with tomato and onion.

Mexican Cornbread Supper

Mexican Cornbread Supper

1 lb. ground beef
1/2 c. onion, chopped
12 oz. can corn with red and green peppers, drained
8 oz. pasteurized cheese spread
4 oz. can green chilies
3/4 c. cornmeal
3/4 c. flour
2 t. baking powder
2/3 c. milk
1/4 c. butter, melted
1 egg

Brown meat. Add onion and cook until tender. Stir in corn, and 1/2 the cheese and chilies. Combine dry ingredients. Add milk, butter and egg. Mix just until moistened. Stir in remaining cheese. Spread over meat mixture. Bake at 400° for 25-35 minutes or until golden brown. Use oven-proof skillet or other baking dish.

CHILI RICE SALAD

CHILI RICE SALAD

1 package uncle ben's fast cooking Spanish rice
2 cups light red kidney beans, well drained
2 cups green pepper, chopped
1 cup onion, finely shopped
1 cup salad oil
3 tablespoons vinegar
1 tablespoon chili powder
1/2 teaspoon hot pepper sauce, (Tabasco)

Prepare rice according to the instructions on the package, omitting the margarine. Cool slightly. Add beans, green peppers and onions. Combine salad oil, vinegar, chili powder, and hot pepper sauce. Stir into the rice mixture. Chill well before serving.

Chicken Tortilla Casserole

Chicken Tortilla Casserole

1 can (4 1/2 oz) of diced tomatoes
1 can cream of chicken soup
Small can of diced Ortega green chiles (blue can)
2 Tbs of Minute Tapioca
1 onion diced
12 corn tortillas diced
Grated Cheese
3-4 Pieces of boneless chicken

Place chicken in foil or oven bag (make sure completely wrapped) and cook in oven at 400F degrees for one hour.

Once baked, dice.

In a large bowl combine the following: Tomatoes, cream of chicken soup, Ortega chiles, and tapioca. This will make a soup mixture.

Layer the crockpot the following order: 1/3 of each
1) Diced Tortillas
2) Diced Chicken
3) Spread Soup Mix
4) Diced Onion
5) Grated Cheese

Repeat each layer in same order. Cook in crockpoot for 4 hours on high or 7 hours on low.

2 cans re-fried beans
1 lb. ground beef, browned w/onions, drained
1 (4-oz) green chillies
3 c. shredded cheese ( your choice)
1 (16-oz) jar picante

In a 9x13 pan layer in order. Bake at *400 for 25 minutes. Garnish with sour cream, chopped green onions, chopped black olives. Serve with corn tortilla chips.
