Mama's Sharp Cheese Cookies
1 cup sifted flour
1 teaspoon salt
1/2 cup butter or margarine
1 cup grated sharp cheese
1/2 teaspoon paprika
dash of cayenne
3 1/2 tablespoons cold water
pecan halves or cinnamon and sugar for topping
Sift flour and salt together.
Add butter and cheese both at room temperature. Cut well in to flour mixing thoroughly.
Add paprika and cayenne blending well in to dough.
Add water last.
Roll dough 1/4 inch thick on floured board. Cut in to rounds or desired shapes.
Top with pecan half or a light sprinkling of sugar and cinnamon before baking.
Bake in a 350 degree oven on greased cookie sheet for 10 to 12 minutes. Cookies should be lightly browned on top. Remove while hot and cool. Store in air tight containers.
Makes 4 to 5 dozen cookies.
