Baked Rice Pudding
1/2 cup uncooked rice
3/4 cup Milk (I use half and half)
1/2 tsp lemon zest
1/2 tsp Cinnamon
1/4 C. Raisins or dried Cranberries
a grating of fresh Nutmeg
Preheat oven to 350F.
Combine all ingredients in 2 qt casserole dish. Bake in preheated oven, stirring occasionally, until rice is tender and milk is absorbed, about 2-3/4 hrs.
Great warm or cold.
