English Peas and Vegetable Salad
1 (14-15 ounce) can English peas, drained
1 small jar pimento, drained
3/4 cup celery, chopped
Salt & pepper to taste
1 tablespoon water
3/4 cup vinegar
3/4 cup sugar

1 can white shoe peg corn, drained (or
bi-colour or yellow or thawed
niblets)1 (14-15 ounce) can English peas, drained
1 small jar pimento, drained
3/4 cup celery, chopped
Salt & pepper to taste
1 tablespoon water
3/4 cup vinegar
3/4 cup sugar
Bring water, vinegar and sugar to
boil; cool. Pour over vegetables. Let
stand 4 hours or overnight.
