Ultimate Oatmeal Raisin Cookies
1 cup sugar
1 cup water
3/4 cup dark raisins
3/4 cup golden raisins
2 eggs
1 cup butter-flavored shortening
1 teaspoon vanilla extract
2 cups all-purpose flour
2 cups rolled oats
1 teaspoon baking soda
1 teaspoon ground cinnamon
1. Bring sugar, water and raisins to a boil in medium saucepan over medium-high heat. Reduce heat to medium-low; cook, covered, 10 minutes. Remove from heat; cool 40 minutes or until warm to the touch.
2. Heat oven to 350ºF. Spray baking sheets with cooking spray. Beat eggs in large bowl at medium-high speed until slightly thickened. Beat in shortening and vanilla until well-mixed.
3. Combine flour, oats, baking soda and cinnamon in medium bowl; slowly beat into egg mixture until combined. Stir in raisin mixture.
4. Drop by rounded tablespoonfuls onto baking sheets. Bake 10 to 14 minutes or until light golden brown.
