Chicken Salad
Yield: 4 servings
Ingredients and directions for this recipe
2 c Cut-up chicken; (cooked)
1/4 c Sour cream
1/4 c Mayonnaise
1/4 c Finely chopped carrot
2 tb Cilantro
2 tb Capers; (drained)
2 tb Finely chopped red bell pepper
2 tb Lemon juice
1/4 ts Ground cumin
1/4 c Finely chopped onion
4 tb TABASCO green pepper sauce
Salt to taste
1 Avocado; peel, cut in wedges
Lettuce leaves
Paprika
Toss all ingredients except avocado, lettuce and paprika. Serve on
lettuce
leaves with avocado wedges. Sprinkle with paprika. Add more TABASCO?
green
sauce for spicier fare, if desired. Makes 4 servings.
