Arugula Summer Salad
2 tomatoes cut into wedges
1 T. red wine vinegar
salt and pepper to taste
4 C. fresh arugula or baby spinach
1 large sweet onion thinly sliced2 tomatoes cut into wedges
Dressing:
2 T. olive oil
1 T. lemon juice1 T. red wine vinegar
salt and pepper to taste
In a salad bowl combine the arugula,
onion and tomatoes. Whisk the dressing ingredients; drizzle over salad and
gently toss to coat. Serve immediately.
