CRUNCHY CAULIFLOWER SALAD
3 apples, cored & diced
1 cup salted peanuts
1 cup plain yogurt
1/2 cup orange juice, prepared
salt & pepper to taste
1 small head cauliflower, separated
into bite size flowerets
3 stalks celery sliced thinly 3 apples, cored & diced
1 cup salted peanuts
1 cup plain yogurt
1/2 cup orange juice, prepared
salt & pepper to taste
Combine cauliflower, celery, apples
and peanuts in large serving bowl. In a small bowl, combine yogurt, juice,
salt and pepper. Pour over salad. Toss to coat. Cover and refrigerate till ready
to serve.
