Chile-Cheese
Rice
2 cups dry rice
2 cups sour cream
2 6-oz cans green chilies
10 oz. Monterrey Jack cheese, grated
Fresh Parmesan cheese, grated
Cook the rice. While still hot, add sour cream, chilies, and Monterey Jack
cheese. Put into a 2-quart casserole dish. Cover and bake at 375 degrees F.
for 25 minutes. Remove cover and sprinkle top with Parmesan cheese.
Bake another 5 minutes uncovered.
