Black Bean N Pumpkin Chili

1 med onion chopped
1 med sweet yellow pepper, chopped
3 garlic cloves, minced
2 Tbsp olive oil
3 cups chicken broth
2 cans – 15 oz black beans, rinsed & drained
2-1/2 cups cubed cooked turkey
1 15 oz can solid-pack pumpkin
1 14.5 oz can diced tomatoes, undrained
2 tsp dried parsley flakes
2 tsp chili powder
1-1/2 tsp dried oregano
1-1/2 tsp ground cumin
1/2 tsp salt
In a large skillet, sauté the onion, pepper and garlic in oil until tender. Transfer to a 5 at slow cooker; stir in remaining ingredients. Cover and cook on low 4-5 hrs until heated through.
