Colorful Turkey Pasta Salad
2 1/2 c. cooked pasta cooked and liquid removed (tri-colored rotini )
2 c. cooked turkey meat cubed
1/2 c. onions thinly sliced
1/4 c. celery thinly sliced
1/4 c. parsley minced
1 1/2 tsp fresh tarragon minced (or possibly 1/2 tsp. dry)
1 Tbsp. oil
2 Tbsp. tarragon vinegar
1 Tbsp. lemon juice
2 Tbsp. reduced-calorie mayonnaise
Directions
In a large bowl, combine pasta,turkey, onions, celery, parsley, tarragon, oil, vinegar, juice and mayonnaise. Mix thoroughly; cover and chill 1 to 2 hrs, or possibly overnight.
