Winter Squash Soup
Extremely low calorie, nonfat healthy veggie soup.
Ingredients
16 oz butternut squash
1/2 cup chopped onion
2 cubes chicken bouillon
1 tsp nutmeg
Directions
Sauté 1/2 onion in cooking spray, like Pam.
Peel and seed butternut squash, cut into 1" cubes.
Add 6 cups chicken stock, boil until squash is soft.
Blend with a blender until smooth.
Add salt, pepper and nutmeg to taste.
