Mom's Potato Salad


Mom's Potato Salad
Serves: 6

This potato salad is the best I've ever tasted. It was a favorite when I was growing up, and now it's requested whenever we throw a family barbecue.

Ingredients:

5 medium red potatoes cubed
1/2 cup Miracle Whip
1/2 teaspoon salt
1/4 teaspoon pepper
1 garlic clove minced
6 hard-cooked eggs chopped
3 sweet pickles finely chopped
1 jar (2 ounces) diced pimientos, drained
2 green onions chopped
Paprika

Instructions:

Place potatoes in a saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender. Drain and cool.

In a large bowl, combine the Miracle Whip, salt, pepper and garlic. Stir in the potatoes, eggs, pickles, pimientos and onions. Sprinkle with paprika. Chill until serving.

Yield: 6 servings.

Tomato Soup

Tomato Soup

1 cup stewed tomatoes
1 tablespoon butter or margarine
1 tablespoon flour
1 cup milk
Salt & pepper to taste

Mix butter or margarine; add the tomatoes and cook until thickened. Heat
milk (but do not boil). Add the cooked tomatoes slowly, (while stirring)
to the hot milk. Serve at once.

Summer corn gets even better with a squeeze of tangy lemon and a
sprinkle of fresh basil.

1 tablespoon lemon juice
2 teaspoons extra-virgin olive oil
2 teaspoons minced fresh basil
salt & freshly ground pepper to taste

Whisk lemon juice, oil and basil in a small bowl. Season with salt and
pepper. Brush over hot corn. Makes
enough for 4 medium ears

Raisin Oatmeal Cookies

Raisin Oatmeal Cookies

1 cup raisins
1 cup shortening
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp. vanilla
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. baking powder
2 cups flour
2 cups oatmeal

Place raisins in small kettle; cover with water and simmer for 2-3 minutes. Drain. Set aside.

Cream shortening, sugars, eggs and vanilla until fluffy. Mix soda, salt and baking powder. Add flour, oatmeal and raisins. Mix well.

Scoop desired size onto cookie sheet; flatten. Bake at 350 degrees for 15 minutes or until golden.

Crouton Crushed Chicken Tenders with Orange Barbeque Sauce

4 servings

1 (6-ounce) bag garlic and butter croutons
1/2 cup all-purpose flour
1 teaspoon poultry seasoning
Kosher salt and freshly ground black pepper
1 egg
1/2 cup buttermilk
1/3 cup plain bread crumbs
1 1/2 pounds chicken tenders

Orange Barbeque Sauce:
1/3 cup barbeque sauce
2 tablespoons orange marmalade
1 tablespoon apple cider vinegar
1 teaspoon hot sauce

Preheat the oven to 375 degrees F.

Cut the corner off of the bag croutons just enough to let the air
escape. Place the bag onto a cutting board, cover with a kitchen towel
and smash it with a rolling pin. Crush the croutons until coarse in
texture.

Set up a breading station with 3 pie plates or baking dishes. In 1
dish add the flour, and season it with poultry seasoning, and a
generous pinch of salt and pepper. In the second dish mix together the
egg and buttermilk. In the third dish add the crushed croutons, and
the bread crumbs.

Dip chicken tenders into the flour and shake of any excess. Then dip
them into the buttermilk, and then into the bread crumb mixture making
sure to thoroughly coat the tenders. Put the tenders on a baking sheet
and bake for 10 to 12 minutes.

Transfer to a platter and serve with the orange barbeque sauce.

Orange Barbeque Dipping Sauce: Add all of the ingredients to a small
bowl, and whisk together until well combined.

Papa Joe's Baked Beans


Papa Joe's Baked Beans

1 Ring Smoked Sausage
2 cans Beans (28 oz. Bush or B&M Oven Baked w/brown sugar)
4 Tbs Molasses (dark)
8 Tbs Brown sugar
4 Tbs Mustard
4 Tbs Maple Syrup
1 ½ lbs Bacon
2 medium onions
4 Tbs BBQ sauce, not hot

Cut bacon in one half inch pieces (save enough pieces to cover top of pan) and fry. Save grease to fry sausage. 

Cute sausage into little pieces, brown and drain, add to bacon pieces. 

Put beans into 9x12 casserole, add bacon and sausage; cut onions in half and slice- add to bean mixture; combine ½ of brown sugar, mustard, and maple syrup and mix thoroughly, top with uncooked bacon pieces, sprinkle remaining brown sugar over beans, drizzle BBQ sauce over bacon and cook without a cover 40-50 minutes or until bacon is browned.

Tomato Surprise Soup


Tomato Surprise Soup

1/2 cup sun dried tomatoes
1 cup roasted red peppers
1 large can chicken broth
1/4 cup fresh basil
3 fresh tomatoes quartered
salt and pepper to taste

Place all ingredients in soup pot and bring to a boil. When fresh tomatoes are apart you need to place soup in blender and puree. Then strain to get out skin and seeds from tomatoes. Serve with a spring of fresh basil on top of each bowl.
Great cold or rainy weather treat. Also a great base for vegetable soup.
