I think the notes people include in their recipes make them more personal. If I write a note myself about a recipe, it will always be written in purple.

CHOUKCHOUKA

CHOUKCHOUKA

ROASTED PEPPER AND TOMATO SALAD


3 large tomatoes, chopped
2 green bell peppers, seeded and chopped
1 red bell pepper, seeded and chopped
1 medium jalapeño pepper, seeded and chopped
1/4 cup extra-virgin olive oil
1/4 cup lemon juice
2 tsps. fine-minced lemon peel
1 Tbsp. sweet paprika
1/2 tsp. ground cumin
Salt, to taste
1/2 cup chopped fresh parsley

In a nonreactive large mixing bowl, combine all ingredients well and let
sit 20 minutes before serving.

Makes 6 to 8 servings.
