I think the notes people include in their recipes make them more personal. If I write a note myself about a recipe, it will always be written in purple.

Classic Lemon Bars


Classic Lemon Bars

1 cup butter, softened
2 1/4 cups flour, divided
1/2 cup powdered sugar
1/8 tsp salt
2 cups sugar
4 eggs, beaten
6 tbsp lemon juice
Garnish:  additional powdered sugar
 
Combine the butter, 2 cups flour, powdered sugar, and salt.  Mix well.  Press into an ungreased 13 x 9 inch baking pan.  Bake at 350 F  for 15 minutes or until golden.  Cool slightly.  Combine the sugar and the remaining flour in a large bowl.  Stir in the eggs and lemon juice.  Pour onto the slightly cooled crust.  Bake at 350 F for 25 minutes.  Cool on a wire rack.  Sprinkle with the additional powdered sugar.  Slice into bars.  Makes 15 to 18 bars.
