Corn Salad Shoepeg
1 can shoepeg corn, drained
1/2 cup chopped onion (red or white)
1/4 cup chopped green pepper
1/2 cup chopped celery
1/3 cup vegetable oil
3 table sugar may reduce to 1 table
1 1/2 teas salt
1 cup peeled and chopped cucumber
2 table red wine vinegar
Combine first 6 ingredients; set aside. Combine remaining ingredients; stir well, and pour over vegetables. Toss gently; cover and chill. Drain.
