I think the notes people include in their recipes make them more personal. If I write a note myself about a recipe, it will always be written in purple.

Cajun Rice and Black Eyed Peas

Cajun Rice and Black Eyed Peas


2 cups black eyed peas, cooked
One 10-ounce can tomatoes, drained
3 cups rice, cooked
1/2 teaspoon garlic salt
2 tablespoons olive oil
1/2 cup onion, minced
1/2 cup bell pepper, minced
1 teaspoon garlic, minced
1/2 cup green onions, chopped

1. Preheat oven to 350F.

2. Combine first 4 ingredients in large bowl.

3. Heat oil in small pan. Add next 4 ingredients to hot oil. Saute 5 minutes.

4. Add to rice mixture. Stir well.

5. Transfer to 8 inch oven safe casserole dish, sprayed with non-stick cooking spray. Sprinkle green onions on top. Cover. Bake until heated about 25-30 minutes.

Serves 6.
