Peach Pecan Muffins

Peach Pecan Muffins

An easy recipe for peach pecan muffins using fresh, frozen or canned peaches. You can't go wrong with this recipe!

Ingredients

1 1/2 cups all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup butter, melted
1/4 cup milk
1 egg
2 medium peaches, peeled and diced*
1/2 cup pecans, chopped

Instructions

1. Combine all the dry ingredients. Combine all the wet ingredients. Stir the two together just until moistened. Fold in peaches and pecans. Spoon into muffin cups. Sprinkle with additional cinnamon and sugar if desired. Bake at 400 degrees F for 20-25 minutes.

2. * You can use frozen or canned peaches for this too, just whir 'em in a food processor to break 'em up a little - make sure you have a cup of pulp. Enjoy.
