AMARETTO PIE
2 c. sugar
1 heaping tbsp. cornmeal
2 heaping tbsp. flour
3 well beaten eggs
2 tsp. vanilla
1/2 c. buttermilk
3/4 stick melted butter
1/4 c. amaretto plus 1 tsp.
Unbaked 9" pie shell
Combine sugar, cornmeal and flour. Mix well. Beat eggs with vanilla, buttermilk, melted butter and amaretto and mix with sugar flour mixture. Pour into 9 inch pie shell. Bake 10 minutes at 425 degrees, then 30 minutes at 325 degrees. Do not over cook. Drizzle 1 teaspoon amaretto over top of pie as soon as removed from oven.
