AMAZING ASIAN FARFALLE
2 limes
1 tbs corn oil
1 pound salmon fillet, skin removed
3/4 cup Asian style dressing
8 oz farfalle pasta, cooked and rinsed
4 green onions, chopped
2 small bok choy (greens), chopped
1/2 cup shredded radicchio (like cabbage)
1 large red bell pepper, thinly sliced
Basil leaves (optional)
Heat grill. Zest and juice 1 lime. In bowl, combine oil and 1 tbs each lime juice and zest, add salt and pepper, if desired. Brush onto both sides of fillet. Grill 10 min. turning once. In bowl, whisk together dressing and 2 tbs lime juice. Stir in next 5 ingredients. Slice remaining lime, arrange on platter. Spoon pasta mixture over limes. Garnish with basil leaves, if desired. Serve.
