LETTUCE & TOMATO WEDGES WITH DRESSING
1 medium yellow onion, halved, peeled
1/4 cup low fat yogurt
2 tbs buttermilk
1 tbs each olive oil, lemon juice and chopped chives
1 tsp sugar
1/2 tsp Dijon mustard
1/4 tsp salt
4 lettuce wedges
Tomato Wedges
In skillet or on grill, cook onion halves, cut side down, 5 min. or until charred, let cool. In blender, puree onions, yogurt and buttermilk 1 min. or until smooth, transfer to bowl. Stir in oil, lemon juice and chives, sugar, mustard and salt. Pour over lettuce wedges and tomatoes, then serve.
MAKES 4 SERVINGS OF SALAD...
