MASHED SWEET POTATOES with PECANS
3 pounds Yams or Sweet potatoes
1/2 stick unsalted Butter (room temp) cut into pieces
1 1/2 TBSP Brown sugar
1 tsp grated Lemon peel
1 tsp grated Orange peel
1 Egg (beaten)
1 cup coarsely chopped Pecans
Place yams on a baking sheet. Pierce with a fork. Place in a pre-heated @ 350 degrees for 1 hour and a quarter. Cool slightly.
Peel yams, transfer to a bowl and mash. Stir in butter, sugar, lemon and orange peel while still hot. Mix egg into mixture and transfer to a baking dish. Sprinkle on the Pecans. Bake for 1 hour in the same 350 deg oven. Serve
