Coeur A
La Creme
Serves 10-12
1 pound small curd cottage cheese -- at room temperature
2 packages (8 oz. each) cream cheese -- softened
pinch of salt
2 cups heavy cream
1 quart strawberries -- sliced and sweetened
whole strawberries
Blend cottage cheese and cream cheese thoroughly. Add salt. Gradually add
cream, beating constantly until mixture is smooth. Pour half the mixture
into a blender and blend 1 minute. Blend remaining half of mixture.
Turn mixture into either coeur a la crème baskets lined with cheesecloth or
individual heart-shaped molds (with holes for draining). Place on a deep
plate and let drain overnight in refrigerator.
To serve, unmold the hearts onto chilled plates and serve with sweetened
strawberries. Garnish with whole berries.
