Vidalia Onion And Cucumber Salad
1 small Vidalia onion -- cut into semi-circles
1 medium cucumber -- peeled/sliced 1/4"
1 ounce blue cheese -- crumbled
1 tablespoon minced fresh chervil
4 teaspoons extra-virgin olive oil
salt
fresh ground white pepper

Spread out onion on serving salad
platter and top with cucumber slices.
Sprinkle with cheese, followed by
chervil.
Stir together oil, vinegar and salt
and pepper to taste in cup.
Pour over salad.
