Italian Cucumber Salad
2 medium peeled cucumbers -- sliced
1 cup halved cherry tomatoes
1 cup sliced red onion
1/2 cup chopped green pepper
1/2 cup Italian salad dressing

Serving Size : 6 2 medium peeled cucumbers -- sliced

In a large bowl, combine all of the
ingredients; cover and refrigerate
until serving. Serve with a slotted spoon.
Yield: 6 servings.
Diabetic Exchanges: 1-1/2 fat, 1 vegetable.
