I think the notes people include in their recipes make them more personal. If I write a note myself about a recipe, it will always be written in purple.

Down Home Meatloaf


Down Home Meatloaf
Makes 6 servings

Prep Time: 15 minutes
Baking Time: 55 - 60 minutes

Ingredients
1 pound lean ground beef
2 large eggs
1 cup plain dry bread crumbs
1 can (14-1/2 ounces) diced tomatoes with sweet onions, drained
no-stick cooking spray
2 Tablespoons dark brown sugar, packed
1 can (8 ounces) tomato sauce
Directions:
Preheat oven 400° F.

In a mixing bowl, add beef, eggs, bread crumbs and diced tomatoes, combine until well mixed and set aside. Line a lipped-baking sheet with foil, and coat it with nonstick spray. Form meat mixture into loaf.

Blend sugar into tomato sauce and set aside. Bake meatloaf for 30 minutes. Remove from oven, pour tomato mixture over top.

Reduce temperature to 350° F. and bake for an additional 25-30 minutes, or until no longer pink in center. Let stand 10 minutes before serving.
