Apple Nut Cake With Cinnamon Spice Glaze

                        **CAKE**
  3               cups  all-purpose flour
  1 1/2      teaspoons  baking soda
  1           teaspoon  salt
  1           teaspoon  cinnamon
     1/2      teaspoon  nutmeg
     1/2      teaspoon  ground cloves
  1              large  egg
  3                     egg whites
  1 1/2           cups  sugar
     1/2           cup  canola oil
     3/4           cup  buttermilk
  1           teaspoon  vanilla
  2              large  tart apples -- cored and grated
     1/4           cup  nuts -- chopped

                        **GLAZE**
  1                cup  powdered sugar
     1/8      teaspoon  cinnamon
     1/8      teaspoon  nutmeg
     1/8      teaspoon  cloves
  2        tablespoons  skim milk

Cake: Heat oven to 350=BA. Lightly coat two 9-inch loaf pans with non-stick cooking spray. Dust with flour, tapping pan to remove excess flour. Set aside. 

 In a medium-size bowl, combine the flour, baking soda, salt, and spices. Set aside. 

In the bowl of an electric mixer, beat together the egg, egg whites, sugar, oil, buttermilk, and vanilla until the sugar dissolves. 

Add the flour mixture and beat on low speed for 30 seconds. Beat on high speed for 30 seconds longer, until no streaks of flour appear. 

Stir in the apples and nuts by hand. Pour into pans and bake 45 to 50 minutes, or until a pick inserted in the center comes out clean. 

Cool 15 minutes on a rack.

Glaze: In a small bowl, combine all ingredients. Whisk to make a medium-thick glaze. Drizzle over loaves and allow to set, about 30 minutes to 1 hour.
