I think the notes people include in their recipes make them more personal. If I write a note myself about a recipe, it will always be written in purple.

Fruit Salad with a Coconut Yogurt Dressing

Fruit Salad with a Coconut Yogurt Dressing

Yield: 4

Ingredients:

4 x oranges
1 tsp of orange zest (5ml)
1 x mango, peeled, cut from the pit and cubed
2 x bananas, sliced in ¼ inch rounds
1 cup sliced fresh strawberries (250ml)
1/4 cup vanilla yogurt (60ml)
1/2 cup unsweetened, toasted coconut (125ml)
2 tsp finely chopped fresh mint, plus a few sprigs for garnish (10ml)

Directions:

Using a sharp knife peel the skin from three oranges. Segment and add to a large bowl. Add the mango, bananas, strawberries and coconut. Set aside

In a separate large bowl add orange zest and the juice from the remaining orange. Add the yogurt and chopped mint to the bowl with the orange juice and mix well.

Add to the fruit to the dressing and toss gently until all of the fruit is well coated. Garnish with mint sprigs and chill in the refrigerator for at least 2 hours before serving.
