I think the notes people include in their recipes make them more personal. If I write a note myself about a recipe, it will always be written in purple.

Honey-Grilled Chicken Breasts

Honey-Grilled Chicken Breasts


1/2 cup orange juice
1/3 cup honey
1/4 cup each lemon juice, reduced-sodium soy sauce
2 tbsp. minced fresh gingerroot
12 cloves garlic, minced
1/2 tsp. pepper
1/4 tsp. salt
8 boneless skinless chicken breast halves (6 oz. each)

Directions:

In a small bowl, combine the first 8 ingredients (all but chicken). Pour 1/2 cup marinade into a large resealable plastic bag. Add chicken. Seal bag, turn to coat; Refrigerate 8 hours or overnight.

Cover and refrigerate remaining marinade. Coat grill rack with cooking spray before starting grill. Drain chicken and discard marinade.

Grill, covered, over medium heat 5 - 7 minutes per side or until a meat thermometer reads 170° F., basting frequently with reserved marinade.

Makes 8 servings.
