Notes

I think the notes people include in their recipes make them more personal. If I write a note myself about a recipe, it will always be written in purple.

Low Country Boil

Popular in the Low Country of South Carolina and Georgia, this great easy one pot meal is very forgiving.  Buy your seafood on sale and hold it in the freezer until you have enough.-Michelle

Low Country Boil
Adjust the amounts by how many people you are serving and what you have on hand.

5 lbs- Potatoes small red potatoes or larger potatoes cut into chunks
3 lbs Beef Sausage cut into 1 in pieces*
Corn on the cob, cut in half
Crab legs
Onion cut into large chunks
Old Bay Seasoning
Shrimp

Boil water in a large pot either over an open fire, or on the stove.  Add your potatoes, Old Bay, and sausage. Bring back to a boil, cook until potatoes are half done (15 minutes or so).  Add in corn, crab, and onions.
Add the shrimp when everything is done cooking. Right before eating.

Drain before serving.  Most people dump in in the middle of a newspaper covered picnic table to serve.

*I have used Italian sausage along with the beef sausage with great results.  Your base is potatoes, corn, and sausage, so you can mix and match the rest according to your likes and dislikes.  Mussels, oysters and crawfish could also be added if you like.
