I think the notes people include in their recipes make them more personal. If I write a note myself about a recipe, it will always be written in purple.

Baked Sweet Potato Sticks

Baked Sweet Potato Sticks

4 sweet potatoes
4 tablespoons butter
2-1/2 teaspoons Dijon mustard
1 teaspoon brown sugar

Preheat oven to 400° F
Slice the potatoes into pieces like large French fries. As you do so drop into a bowl of cold water to prevent browning.

Melt the butter. Stir in brown sugar and mustard until the mixture is smooth.

Drain the potatoes and pat dry. Lay potatoes out on a baking sheet. Using a pastry brush, coat the sticks with the butter mustard mixture. Be sure to cover all surfaces of they will discolor.

Bake for 20-30 minutes or until potatoes are tender.
