I think the notes people include in their recipes make them more personal. If I write a note myself about a recipe, it will always be written in purple.

Pastitsio

Pastitsio (Greek Casserole)

1/2 lb. ground beef
1/2 cup chopped onion
1/2 clove garlic, minced
1 can (1 lb.) tomatoes, cut up
3/4 tsp. salt, divided
1/8 tsp. each pepper, cinnamon
1/2 cup grated parmesan cheese, divided
1 pkg. (8 oz.) elbow macaroni, cooked
3 tbsp. butter or margarine
1/3 cup flour
2-1/4 cups milk
3 eggs

Heat oven to 400º F. (200º C). In a large skillet, cook beef, onion and garlic until meat is browned and onion is tender, stirring occasionally. Add tomatoes, 1/2 tsp. salt, pepper and cinnamon; simmer 15 minutes. Stir in 1/4 cup cheese and macaroni. Turn out into a 12x8x2" baking dish lined with foil (new releasable foil works great), set aside. In a medium saucepan, melt butter, blend in flour and remaining 1/4 tsp. salt until smooth. Gradually stir in milk. Cook and stir until sauce thickens, about 5 minutes; cool slightly. Remove from heat. Beat in eggs, 1 at a time. Stir in remaining 1/4 cup cheese and pour over meat mixture. This layer is custard layer, and puffs up nicely. Place in oven; lower temperature to 375º F. and bake 30 - 40 minutes or until top is golden and a knife inserted in center comes out clean. Let rest 5 minutes before cutting.
