I think the notes people include in their recipes make them more personal. If I write a note myself about a recipe, it will always be written in purple.

Cool Cucumber Pasta Salad

This salad makes a nice change from the usual potato salad at Potlucks and Picnics. It's crispy, sweet, and tangy. (It's also a good way to use up some of those cucumbers that we are going to be trying to find something to do with from the garden soon.

Cool Cucumber Pasta Salad

8 ounces tube pasta
1 tblsp vegetable oil
2 medium cucumbers, thinly sliced
1 medium onion, thinly sliced
1 1/2 cups sugar
1 cup water
3/4 cup vinegar
1 tblsp prepared mustard
1 tblsp dried parsley flakes
1 tsp salt
1 tsp pepper
1/2 tsp garlic salt

Cook pasta according to package directions; drain and rinse in cold water; drain well. Place in a large bowl; stir in oil, cucumbers and onion.

Combine remaining ingredients; pour over salad and toss. Cover and chill for 3-4 hours, stirring occasionally. Serve with a slotted spoon.
Makes 8-10 servings.
