CAJUN BEANS AND RICE

CAJUN BEANS AND RICE

Yield: 6 servings

INGREDIENTS

1 tablespoon vegetables oil
1/2 pound turkey sausage or other low-fat smoked sausage,
sliced into 1/2-inch thick slices
1 medium onion, chopped
1 medium green bell pepper, chopped
2 cloves garlic, minced
6 sups cooked rice
1 15-ounce can kidney beans, drained and rinsed
1 15-oz can navy or Great Northern beans, drained and rinsed
2 14-1/2 oz cans Cajun-style stewed tomatoes
1 teaspoon oregano
1/2 teaspoon hot pepper sauce
1 cup thinly slice green onions.

INSTRUCTIONS

Heat oil in large skillet over medium-high heat until hot. Add
sausage, onion, green pepper and garlic. Cook, stirring 7 to 10
minutes or until sausage is browned and onion is tender.
Add rice, kidney beans, navy beans, tomatoes, oregano and hot pepper
sauce. Cook and stir 2 to 3 minutes more until well blended and
thoroughly heated. Sprinkle with green onions and serve immediately.
